I was so excited to see this question because you really left it wide open for some different suggestions.  Hmmm.  I have a few ideas in mind that I think your girlfriend will really enjoy. 

If we think outside the box, I'd say treat yourself or someone else to a 1800Skyride Nationwide Gift Certificate good for two years. You will always have PRIORITY BOOKING whenever you redeem the certificate. You can go to any vendor they affiliate with and  have a hot air balloon ride or skydiving adventure.

If you are more traditional, then how about an iPod Touch.   You can load all the songs she loves and songs that have special meaning to the two of you.
