Should I just buy the more expensive pans for a three layer cake or can I use the cheap pans you can buy in a pack? Will the cake cook correctly?

You can definately use the cheaper pans, that i would do though is lightly butter the sides and bottom, then cut a circle of parchment paper for the bottom and cut a strip to go around the sides!  This will prevent sticking, that is the biggest problem you would get with the cheaper pans!
