Here are some great gifts that you can give your mother in law. I tried to mix the religious and dolphin theme together and I came up with some nice ideas.

My mom is a big fan of dolphins as well, and I got her a dolphin puzzle one year that she loves! She shows it to everyone that comes to the house, and the grand kids love to play with it as well. It's a little three piece puzzle that makes into a dolphin, and is pretty cheap too.For mother's day this year, I got my mom a "Bucket Filled with Wishes". I know she will love it, because she loves to always have extra towels. The bucket will make for a great decorating item also.
