The smarttalk seems to have a decent recording quality and it is cheap. In general it runs around $10-$15.

Now there is also the mini microphone from ACCstation.  

* Attach this mini microphone to your iPod or iPhone for immediate voice recording capabilities
    * No battery required, just plug it into the 3.5 mm slot
    * High quality microphone
    * Compact and portable, records high quality audio
    * Software such as iTalk Recorder or Easy recorder is required (Software NOT included)

Philips and Altac Lansing have similar mic's that work with the iPod touch 2g. All of these options run under $20.
